Notice they aren't really talking about plants or animals adapting - as in changing what they do themselves - they are talking about them migrating to areas where environmental conditions allow them to carry on as before. This routine inability to adapt in a true sense is why every time there is a large scale completely overwhelming event like a continental ice sheet creeping over and sitting on the landscape a huge proportion of the existing species count is eliminated.
