Help identifying "weed" in my yard

Hello!

I live in Central Florida (about 15 miles from Kennedy Space Center). I am doing some work on my yard (long overdue!) - and while planting some flowers over the weekend, pulled up several "grassy looking weeds" - that have the strangest root system I've ever seen! I have searched and searched the internet to try to identify it - but have been unsuccessful.

Can anyone here identify this?
