We would like to have a raised bed of salad and stir fry greens. Since I am new at types of soil etc ....does anyone know what would be okay to plant together?

Specifically we would like to plant:

A beet specifically for the beet green tops (my fave)
    A baby bok choy
    Variety of lettuces
    Spinach

Other things I am not thinking of yet :)

Also, how deep of a raised bed would be needed for these? Thank you!!

All of those greens can be grown in the same bed. I've grown mesclun mix that has exactly that combination, along with some endive. None of the plants have particularly deep roots; so the raised bed can be quite shallow.
