I am growing speghetti squash for the first time and I dont know when to harvest it. What color should it be? how large? firm or not? Thanks
Hey Fitz, We grew spaghetti squash when I was young. It should be firm - think of the hard winter squash you buy at the market. I think the colour should be something like butternut sqash when ripe (not green, sort of a mellow yellow, less pink than butternut). Size varies, but should be around 23 cm (9 in) long. I just noticed you are located in Tucson. Veggie gardening has to be a challenge there, eh? How do you keep things from drying and burning up?
