Why don't Persian limes have seeds? Lemons have seeds and Key Limes have seeds, but not Persians. Anyone know why?

This lime, also known as Tahiti or Bearss lime, produces fruit by a process called parthenocarpy in which no fertilization takes place so seeds are not produced. However seed does result the odd time when there is fertilization.

Persian Limes do produce seeds. All you have to do is purchase approximately 1000 limes, and the odds are that you shoud get a seed. In other words, the average is one seed per every 1000 fruits. - Millet
