My peach tree suffered much damage 2 winters ago and I had to cut it down to a Y-shape stump. To my amazement, it grew back to healthy size and looks quite promising now with lots of buds ready to burst into spring. The re-growth was so robust that shoots also grew from some of the roots. As a result, I have branches coming out of the ground. Should I prune them? If so, at what level?
If your Peach is grafted, which is most likely is, the rootstock producing shoots will not be the same variety of peach. Though peaches may be produced from the shoots, it is difficult to maintain a sturdy new tree form from these shoots, as they tend to weaken, with age and weight, from the fruit and growth of the new tree. You may want to try transplanting a few shoots just for interest, and see what may come in a few seasons from now. Good luck.
