Attached are 3 photos of an unknown orchid that I inherited. I do not know what the flowers are like. 1) Is it possible to identify the family based on the leaves and what you can see here? 2) Do I cut back that old flowering stem, and if so, where should I cut it to?

Thank you so much for your time and any information you may have. I'm hoping to learn how to care for this plant and ensure it flowers again. I just repotted it today.

It is almost certainly from the genera Phalaenopsis or Doritaenopsis (a cross between genera Phalaenopsis & Doritis). As for cutting the flowering stem, cut just below the last node that had a flower (If you don't know where that is, just cut the yellowing & drying up portions). Often Phals will send out another flowering stem from a lower node on the existing flowering stem. If the whole stem turns yellow, go ahead and cut it all off.
