There are very few nut trees that won't grow well in Victoria if a tree is all you want. To fully mature some nuts (like Pecans) may require more heat than Victoria will provide on a consistant basis. Pine nuts and hazelnuts are a sure bet. Butternuts, Baurtnuts, black walnuts, Carpathian walnuts are likely to produce well most years, along with the Japanese walnuts.
