Limequat harvest!

    We just harvested our Eustis Limequat fruit :-) In our case we are making limequat-onade and freezing some in ice cubes. What do other members do with their limequats? Limequat harvest! | Aprici

    They don't appear to be fully ripe. As I recall the sweetness in the peel improves when allowed to turn yellow. Do you prefer to use the fruit while they're still semi-green?

    I tried to eat some that were fully ripe, a pretty yellow colour, but they were still too tart for my taste and I thought lost a bit of their clean lime flavour when fully ripe. I do prefer to use them as key lime equivalents. Their flavour is quite similar but with what I would call a 'spicy' twist. Not hot-spicy, just interesting spicy ;-)
