Leeks that overwintered - now what?

    So I didn't tidy my garden plot in the fall and left a bunch of leeks in the ground. They're all still there and looking large and quite healthy. Are they edible still? And a bunch of beets that I thought were dead seeds decided to grow over the winter too. And some white onions s where the tops had died have all regrown. Should I pull everything and start again? New at this....

    Any vegetable that survives the winter and starts growing in the spring is fair game. Leeks always survive here; we use them as a winter and early spring vegetable every year. They will be good until they flower; use them up before then. This past winter was one of the mildest that I've experienced; so all kinds of vegetables survived that normally don't.
