Worth thinking about Vine Maple Acer circinatum too, it is closely related and has very similar leaf shape, and (usually) larger leaves.
I've grown A. japonicum ‘Aconitifolium,’ ‘Dissectum,’ ‘Meigetsu,’ 'O isami,' 'Takinogawa,' ‘Vitifolium,’ ‘Wood’s No. 2,' and a number of seedlings. All are nice plants, but 'Wood's #2' has clearly had the largest leaves for me. I'm in zone 6. I think it requires a fairly sheltered spot, out of wind and all-day sun. Good luck. D.
I haven't seen it in person but i am pretty sure this may be the biggest. Acer japonicum Yama kage (Mountain Shadow). worldplants has a photo showing the leaf size.
Yama kage is without any doubt the cultivar with the largest leaves among those I am growing (not growing Woods N°2 though) Gomero
