I have two Pawpaw trees. One has one flower the other has many flowers. I live at Boundry and Hastings. Is there anybody who has some extra flowers that I could get in order to hand-pollinate? Is there anyone who can show me how to do it and help me identify the flowers for male or female?

Can't help you with providing you pawpaw flowers, but check this video to learn how male and female flowers differ:

The video doesn't seem to indicate this but I think told that the flowers actually starts off as a female flower and then changes into a male flower. Not sure if this is accurate

AFAIK, this is correct. You can collect pollen from flowers, where pollen is clearly visible, and pollinate flowers, where stigma is prominent and looks like waiting for some pollen..
