I have a giant Peace Lily, Spathiphyllum floribundum, which appears to be healthy and flowering. How and when should I trim in order to maintain maximum healthy growth?

Not so much trim, as divide. You should, of course, take off any dead or yellowing leaves, and if you wish you can also take off the inflorescence once it's spent - unless you want to try pollinating the flowers, of course.

Generally with Aroids, if they're healthy and flowering, then you should just maintain their current water/fertilizer regimen, and otherwise leave them alone. If your Spathyphyllum gets too crowded for its pot, you can either re-pot it or gently separate some of the corm to produce a second plant. Be warned that if you do decide to do this, it will sulk for a while.
