Hello jathibault, apple seeds require a chilling period (called cold stratification) to germinate. After collecting your seeds, rinse them and put them in a small seeled plastic baggie with a handful of sterile peat or seedling mix. Put that bag in a heavy paper bag and stick it in the back of the refrigerator for three months. After three months or so (maybe less) you should see small roots. The roots are called radicles when they first emerge from seed. Plant the seeds and grow on. Each apple tree will be a new cross, so choose seeds from apples that you like and hope for the best.
