Now about 8 - 10" tall by around 1/8' thick stem.
What is the next step, let it grow, trim it off or what.
    Thanks

Just let them grow. Do not trim them off!

Let them grow, you my even get some blossoms, which when pollinated will turn to little berry like seed pods and turn red in the fall. You have two more years to wait before you can start harvesting, also remember asparagus are heavy feeders so add well composted manure yearly.
