Anybody know what veggie I planted? The suspence is killing me...

I think it's 'Amaranthus inamoenus Willd '

 

is there a more common name for it? cause i don't remeber buying seeds with that name... i think it may be a root veggie cause i planted it in front of all of my other plants thinking "these won't block the sun"

 

Look more like bolting Spinach to me.

how do i know when i can pick the leaves

 

If it's already seeding(bolting) then it's probably tough and bitter.
