I noticed a few wilted leaves so I checked the roots and all of the little bulbs are soft and deflated. Is there a chance to save it? I set it out to dry yesterday out of the soil but they’re still soft. This is my favorite plant. I really only water every 2-3 weeks but I’m thinking my soil is not light enough (I think it was cactus soil?). Or should I just try to propagate? One of the stems fell off and I stuck it in orchid bark but not sure what to do from here.

If it's root rot, which it sounds like, you'll have to propagate from what's left. Have a look at the following recent thread on this plant: Help with ZZ Plant?.
