Good afternoon @Many_figstree, IMO it is English Lavender every time, not because I'm English, but because I have tried growing French lavender and it has little scent and not so hardy. Not sure about Spanish lavender, but your location suggests it does not seem the same weather conditions as Spain where it grows well. It does have a similar scent though.
The Lavender I have grown just loves full sun and thrives in those conditions, I watered it 'rarely', it is a Mediterranean plant after all.

There's commercial lavender production operations in the rain shadow areas of the northeast Olympic Peninsula and adjacent parts of Whidbey Island, search this subject area for web sites of individual farms mentioning which cultivars they prefer. And describing how they grow them (planting site conditions and maintenance pruning are two important aspects to maintaining lavender as a decorative plant in garden settings).

Brian Minter just wrote about lavender in the Vancouver Sun; here's the link, for as long as it works - maybe with this link being on msn.com, it will work longer than usual.
Brian Minter: Lots to love with lavenders

Good morning Georgia, agree it would be nice to see an update from @Many_figstree. I still think the Hidcote would be ideal.

Because of their hardiness and intense fragrance, Lavandula angustifolia and L. intermedia ‘Grosso’ are the most frequently cultivated species.--- look like this is the one we shall choose to grow. [ATTACHl]188138[/ATTACH]

@Many_figstree, glad to see you have chosen, hope you get many years of perfume and bees.
Do update the thread in 2021 when they are in full bloom.
