How do you prune a walnut tree?

My walnut tree is about 2 to 3 years old and I want to keep the height and width of the tree at a small and manageable state.

I have cut off the ends of the branches every year to prevent it from getting any bigger, but, am I cutting off the possible growth of nuts?

Very possibly. Walnut trees are not meant to be small, and of course just cutting the above ground tree won't change the root system much - it'll still keep growing!
