Do you know what variety those are? I'm surprised that this is the first harvest of the year, when did you plant them? From my notes on last year (didn't plant any this year), I planted on March 15 and harvested on May 15. Actually, I just checked frost dates, and you're about a month behind us in Vancouver, so that makes sense!
I've been picking leaves off my plants for the past 4 weeks or so, I prefer young foliage. It leaves me with some rather ugly looking plants though hahaha.
Usually I pull the whole plant for eating, by putting a probe down the side and not disturbing the remaining stand. Usually two plant make an adequate meal for two or three people. I find a little goes a long way. There are plenty of similar greens in the garden, beet greens and swiss chard. I think spinach is the most tender. http://www.durgan.org/Blog/Durgan.html
