They are so sweet that one can eat a slice similiar to eating a tomato slice. They don't last as long as cooking onions, but usually I get two to three months. I plant annual red clover in the empty space, and work it under in the spring. It supplies food for the earthworms and probably supplies some fixed nitrogen to the soil, plus a bit of fibre. Durgan.
