shallot heads

    shallots have 'mini onions' at top of green stem.
    Are these the seeds?
    when to harvest shallots as green stem does not seem to be dying or turning yellow...

    Those are the flower buds - they'll open up into nice, spiky-looking flowers, and after those are finished come the seeds.

    Your Shallots might actually also be "Walking Onions", which go by other names too. These are "topset" onions & they produce mini bulbs in clusters that resemble inflorescences at the end of fairly fleshy stalks. These tiny little bulbils can be planted.

    I grow them for curiosity, but rarely use them 'cos I cannot ever decide when I am supposed to harvest them & what for (large bulb, small bulb, spring onion style, leaves used like chives...too many choices) When I have tried them they are mild & good.

    Wait & see if there really are flowers or little bulbs - or maybe some of each, who knows.
