Belle De Boskoop, Ashmead's Kernal, Brown Russet, and Hudson'e Golden Gem are all scab resistant. and are the easiest to grow organically.
I'm a big fan of Belle de Boskoop; it's sweet and sour, almost lemony tasting and tends to be ignored by coddling moth. It's a vigorous producer though the tree has remained small (for now). Thanks for the photo of Belle de Boskoop, tallclover. It made me realize that this is the variety that came with the property that we bought in Burnaby, BC, about 35 years ago. I always thought that the tree was a Golden Russet, because the apples had almost no red in them. This year, probably because the summer had record-breaking heat, most of the apples are quite red and look just like those in the photo.
