I have a large rubber plant, that next year I believe will reach our ceiling. Can this plant be cut back and will it look ugly if I do that? Also, when would be the best time to cut it back?

You might want to start out with just taking off 1/3 or so off the top at first, and take out any branches that look out of place.
New growth will come back near where you made the cuts.

There is only one stem, like a tree trunk, no branches.

Once cut back, you should see multiple branches in which to root.
