Keep in mind that the leaves are feeding the plant (photosynthesis and all that) including the fruit. The balance varies according to the variety, intent (wine? juice? table?) and the climate. In season thinning can be done to increase fruit's exposure to the sun (but not too much!), discourage vegetative growth, decrease fruit load (yes, sometimes you want to remove bunches), and other reasons. Leave at least 20 leaves per bunch, more if the bunches are large.
