Can anybody give me advice on how/when to prune the following species to encourage fruit production?

Names given are the local Spanish, the common, and the scientific where I can find it.

Nispero / Loquat (Eriobotrya japonica) - I don't know which cultivar.
Guayaba / Guava (Psidium guajava) - or it may be another Psidium spp.
Mango (Mangifera spp.) - again, not sure of the cultivar.

I'm in Ecuador, and there are two seasons: wet and dry. It's currently the dry season.

loquats flower on newer growth so if they are trimed at the wrong time of year you may be triming off that years fruit so i would only trim those to shape them or keep them under control. i donot grow mangoes as i am allergic to the sap in them and no longer like the fruit but i do know several people who do grow them and the same seems to apply. not real sure on the time of the year to trim them to keep them under control i know the neibors loquate blooms sometime in late feb or early march it also has a flower and fruit flush later in the fall. all i have is a few seedling loquats so i donot know how long till they will fruit. quavas are not as fussy i donot eat them but do have a frutiing plant they seem to bloom off and on all year so triming will pobably not hurt the guava but dought it will increase fruiting. others may have better info on the mangoes hope any of this helps
