I would like to transplant my Ponderosa Lemon as I'm seeing roots on top ....the last time I was at WalMart this is choices I have

    Perlite
    PeatMoss
Orchide Mix (looked like small wood chips)
    Potting Soil 08-12-08
    and of course "kitty litter"

    so what do you recommend?

Kitty litter. Definitely lol assuming it is the RIGHT ONE!!! 75% kitty litter to 25% compost is around what I am using. Your trees will love you for it.

The kitty litter we have here is made from red fired clay, the same, I think, as turface over there. Go to the garden centre, and buy anything that looks small and won't break down - think of like little aquarium gravel pieces. If you can find turface, all the better. Perlite is a pretty common thing to use, but in my experience its a pain. If you mix it with compost, the perlite will float to the top and the soil will sink to the bottom when watered - not good! And it is very light, which means your tree isn't always well anchored in.

Do a search for something called (I think) Oil-dry, which is the same as out kitty litter and available in a lot of different countries. Either way, small stones which don't break down. I will attach a pic of my Calamondin (which I'm struggling to bring back to health), which is in mostly the kitty litter with a bit of citrus compost. Try to find a product like it. Turface will be easiest to find I think.

And yes, any compost ill be fine as long as it doesn't have a really high pH
