cool associations...and a recipe this one makes me think of cool white linen shirts and India...and then the green core makes me think of cucumbers and overall i am left with a sense of raita (a cooling yogurt dish for consumption after the spicy spicy indian dishes with cucumbers and some spices). Raita 2 cups plain yogurt (or soy yogurt eg. Whole Soy brand) 1 teaspoon organic sugar +/- taste 1 teaspoon ground cumin +/- taste 1/2 teaspoon crushed red pepper flakes +/- taste Salt and white pepper (black is carcinogenic) 1 large cucumber, peeled, seeded and diced (from the garden in the summer!!) 1/4 cup chopped fresh mint (from your kitchen windowsill garden!) 1. Whisk yogurt until creamy. If thick/stiff, thin it with a teaspoon or more of lemon juice and whisk again. 2. Stir in remaining ingredients. 3. Enjoy with friends after a yummy indian(-inspired) meal. Yield: 2 cups - vary as needed. This may only be enough for a small group of people.
