I got this plant from a friend didn't know what to do with this and I am trying to see if I can save it.

Most of it's roots are rotted, except for one newish root, but it doesn't look that good either. The leaves are very soft and twisted, the cut flowering stem are turning white. What is the cause for that? and should I bother to let the root dry out a bit and re-pot it?

Use a sterilized knife or scissors and cut off all the mushy roots and the flower spikes and don't damage the one good root. Carefully wrap some shagnum moss around the base of the plant and the good root and place the whole plant in a ziploc bag in medium light and warm temps. Be careful that it doesn't go moldy. You should see new roots soon.

There is also a method of potting it in straight perlite with a lot of water, but I'll have to look that one up as I'm not sure the details.

There could be a number of reasons why this has happened to your plant. Seems to have been over watered and probably the media got old and rotten, contributing to the rotting roots.
