I have two recent apple trees. 6 years ago we planted a "mead" variety which has never blossomed since the first year.

My new tree planted last year, a gala, also hasn't blossomed.

Am I just being impatient or is there a problem?

Some trees take a few years to get established. If the tree is otherwise healthy, you may just have to wait. I have a plum tree that I planted 6 years ago that just flowered (beautifully) this year. Previous years no flowers at all.

If you want to spring for a soil test, you should look for low phosphorous levels as that is involved in flower formation. Or work in a small amount of guano or soft rock phosphate into the soil around the tree.
