Hi, in my housing coop we have a large fig tree, which is dropping figs all over the lane way. I asked another person about it and he told me that they are not good for eating, but are "pickling figs". I found some recipies for pickled figs, but before I do this, I wanted to check that this was likely going to turn out well. Some of the figs are purply-brown; others are green. Presumably I want to harvest the purply-brown ones and see if the green ones ripen? or are all a-ok when pickling? Mary
Sample one that is not yet over the hill and you will almost certainly find that these are delectable fresh. As good as some kinds can be once you taste a fresh fig right off the tree you will begin to see the dried ones as decidedly inferior, a different critter entirely. Pickled figs I can only assume to be of similar character.
