A portion of the roots are collected, washed and chopped into small piece and put in a blender with some vinegar and lo and behold one has a beautiful horse radish condiment. Hot! Hot! Hot! The plant is a perennial and propagates well even from a small root. Some of the root is left for next year's growth. This root was planted in the spring of 2006 and is doing remarkably well.
