I purchased some property with some fruit trees, I watered them during the summer, but now that we are going into winter I'm not sure whether to continue watering. Or should i only water once or so a week. Need some advise.

Just enough to keep soil moist. If these are deciduous fruit trees like apple trees they don't do much during winter, when leafless. However, if yours need a dormant spray to prevent pest problems in spring or summer then you would be dealing with that then. California Cooperative Extension has much information about fruit culture online, you m might want to look at some of that.
