I'm absolutely new to this group. I own and operate a successful tree service in Southern California high in the San Bernardino Mountains. I specialize in the native varieties and have earned a good reputation. One of the conifers we work on regularly is the incense cedar (Caloderus decurrens). Does anyone know if this is an appropriate wood to use for grilling salmon and other foods? My family loves to bar-b-que and are quite curious about this. Thanks for your time.
You seem to be asking is Calocedrus wood would be suitable for grilling. That's an interesting question that a food / cooking forum might be able to answer.
I doubt that it would be suitable. The wood used for salmon planks is western red cedar, Thuja plicata, a very different plant than Calocedrus decurrens. Can't find a whole lot of info on toxicity, but Calocedrus decurrens can cause dermatitis and does not seem to have much of a history of consumption or medical use.
