Bamboo Question

I bought this Bamboo cane in china Town in Chicago. I know they usually keep them in water. This one looked mature, had roots on the actual cane. I had to buy it in the attempt to cut it near the root and grow it in soil. Can this be done? What type of soil, what moisture requirements, any advice would be great!
