I intend to put up an arbor to provide shade on a concrete patio. Its south facing and baking in the summer. I have pictured a 9 or 10 ' tall arbor made of hefty beams covered with a major leaf plant, such as grape or perhaps kiwi. My question is.. will the wasps and hornets take ownership of it or should I try some other creeping plant.

Grapes should actually help keep hornets away, but they will try to colonize kiwis - I finally gave up on them for that reason. Grapes, however, will cover the arbor in one season. I like Concordes, but check your local nurseries - they will always have suggestions.
