wow, they're gorgeous!! do you really need to cut them back??
(basically just a rhetorical question since you've stated you want to)

just cut them to whatever level you want - i would do staggered lengths though or it won't look natural.

they will leak white sap, so protect yourself because it can be irritating (especially eyes and mouth).

The Sansevieria trifasciata (on far left) would not benefit any cutting at all, as this is the natural height in your pot... you will destroy its beauty.... try starting new ones by dividing them, it is quite easy to do... remove from the clay pot, and loosen the root ball, and either tug loose or cut the adjoining tuberous roots/shoots.

it's the milk plants, not the sans, that they want to cut back...

although, you are correct that the sans should not be cut back. generally, that is. i know some say you can cut the tips off and root them - i've not tried it, so i don't know if it works or not.

that's what i came back to comment on (forgot earlier) - whatever you cut off of the milk plants, those pieces can be potted up to start new plants. just let the ends dry/callous over for a week or so and then pot them up and let sit in the dry medium for another couple weeks and then start a watering regimine.

Wow---all are magnificent! If these were my plants I would be searching for new homes for them, where they could grow as they wish, and get good care. Oooh...please don't cut them!
