At the end of the snake like tentacle the bulbil, seed pod, forms. The scape is often cut and used like the cloves. I don’t use the scape and have found if left on to mature the cloves get slightly larger at harvest. The bulb splits, but seems to have no bearing on the storage time. Scapes are a characteristic of hard neck garlic. Harvest in usually in July, but I leave until about the end of August.
I just finished harvesting the last of my garlic scapes. They provide an early taste of garlic in a side dish, sauteed alone or mixed with other vegetables.
