I pulled one and baked it with a Yukon Gold potato for lunch to see if it had merit. It has. It was very similar to the potato and will easily get twice as large. I was introduced to the cultivar by a Chinese person. Apparently they are a cool weather plant.

This is my method of preserving for off season use. The finished product is similar to a potato and is essentially used in the same manner.This was my first year using this vegetable.
