Which Ginger?

    Of the many gingers, I only know of one that is good to use while cooking...are others that I grow also tastey? Are any toxic?

    I know that Zingiber officinale and Alpinia galanga are favorites used by many in multiple cultures. Web searches and library study would turn up others.

    Is Alpina Galanga the root that is quite large and very popular in Thailand?
