   I want to build a series of raised garden beds to improve my vegetable patch. Does anyone have opinions on what is the optimal height of the beds?

   Read "Square Foot Gardening". It makes a lot of sense. The author recommends 6" height. If you don't want to bend so low, you can make it higher.
