    Tuber melanosporum (the best one), Tuber magnatum, Tuber borchii, or any other ?

    It's like wine : you can have the same grape variety, put chips of wood in a metal tank, you'll never have a real Chateau Margaux that has matured in an oak cask for years.

    "Truffe noire du Périgord" requires such an environment that the rest is just pale copies of the original, huh huh...

    Hi @AlainK,

    AFAIK, this festival is about both native PNW species and European species being cultivated in the PNW.

    I would not be surprised if they included taste tests contrasting region, species, host tree differences etc.

    I have tasted several species and liked them all for different qualities.
