do you guys think these are shaped from autumn gold or other types?
I think I can try to use Princeton Sentry to shape them to this shape.

But forsure, the japanese didn't have the princeton Sentry as it was developed in USA.

Anyone know why variety these ginkgo are shaped from?

Your best bet is to continue researching upright cultivars available to you in Toronto, choosing one that produces similar growth to the trees shown.

I was able to find some young Ginkgo Fastigiata in my area. will post pic but forsure, it looks like they need to be prune to shape every year or every other year.

This is certainly Ginkgo biloba 'Fastigiata'. Cultivar is very similar to Ginkgo biloba 'Fastigiata Blagon'.

That's a pretty nice looking tree.

The form immediately reminded me of an evergreen.

Those fastigiate Ginkgo would make an interesting companion planting with giant Sequoia, because the spire-like shape is very close.
